The reaction medium is very important for enzyme activity, specificity and selectivity. When the medium is non-aqueous the water content plays a crucial role. Hence efficient and simple ways to set, control and maintain the water activity aw at preset levels are of greate interest. Examples of the significance of water activity for enzyme catalysis are given. This comprises the significance for the enantiomeric ratio E and equilibrium in resolution of racemic mixtures. Furthermore, ways to control aw are described.

In a world where the expectations to the role of an engineer are constantly changing, as is the way of educating them, the Department of Chemistry at Østfold University College joined forces with surrounding industry and employer organisations (The Federation of Norwegian Process Industries and The Confederation of Norwegian Business and Industry) in 2001 to develop a new learning environment focusing on engineering education in chemistry. The aim was to create an education satisfying the requirements of the industry today, an attractive and motivating learning environment for the student and a viable collaboration between the Department of Chemistry and surrounding industries. In the model of collaboration adopted, the industry has become a part of the chemical engineering education throughout the whole course (3 years). In the first year, the students are allocated a partnership company for the duration of their study with a mentor responsible for their training there. In addition to projects related to chemistry, students will also learn about company organisation, safety, working conditions, information and communication, teamwork and economy. The placement integrates many of the subjects taught at school, creating a framework for merging and applying knowledge. The goal is to create motivation for learning, where learning is their tool for participating in industry life.
